I've made the zucchini stuffing with only 4 zucchinis, but didn't down the recipe, so I could put the extra stuffing on top of pork chops, and it turned out awesome. That might actually be good for your chicken.
With both recipes, I substitue milled flax seed for breadcrumbs. Flax adds a nuttier flavor and is much higher in fiber, plus it moisturizes from the inside out. We add it to nearly everything. Just FYI, it seems really mushy, like you did it all wrong, before you put it in the oven. But don't fret, it comes out awesome.
Rose and I love Rachel Ray. Her recipes are almost always healthy. Even her comfort food recipes are often healthier versions of what her mom used to make. I often search Food Network & her magazine site for ideas. We were talking about getting a subscription after we move...maybe I'll order that now!
