Breakfast Delight!

We had breakfast for dinner tonight, and the real star was not the admittedly tasty breakfast steaks, it was the low-carb cinnamon creme that was dolloped on the high-fiber french toast.  The recipe for this creamy deliciousness follows:

1 C  Vanilla Soy Slender no-sugar-added soy milk
1 Tbsp cornstarch
1/3 C splenda
1 tsp cinnamon
1 egg
1 Tbsp butter

Whisk together all but the egg; bring slowly to a simmer until the cornstarch causes it to tighten up.  Whisk this slowly into the egg, and then put it all back over very low heat.  Stir constantly until it is the thickness of your liking (ours was pourable but substantial; getting it thick like pudding would also be delicious) and then add the butter.   Stir just until melted, and voila!  A very low carb treat that will taste better than the glop they put on your french toast at IHOP.

This was truly something else.  It was wonderful for bob_wonderllama to have something reminiscent of the good old days of stuffed french toast covered in gloopy puddingy goodness.
