--carina's tasty vegan apple crisp---

4 large apples (i like fuji, gala, braeburns..)
3/4 cup light brown sugar
1/2 cup flour
1 tablespoon pumpkin pie spice
1-1/2 cups rolled oats
1/3 cup earth balance spread or vegan margarine
1/2 cup walnuts or pecans (optional)
1/4 cup maple syrup (optional)

Preheat your oven to 350° F.

Core your apples, and thinly slice them. (i prefer to leave the skins on. but you may peel them, if you wish.)

Toss the apples with 1/2 cup of the brown sugar, 1 tablespoon flour and 1 tablespoon pumpkin pie spice (or cinnamon.)

Spread the apple mixture evenly in a 9” x 13” baking dish of your choice (i use a glass pyrex one.)

Mix the rolled oats with the remaining flour, sugar and an extra dash of pumpkin pie spice (or cinnamon.)

Add the earth balance spread (or margarine) and combine the mixture together (i like to use my hands) until it is crumbly. Stir in 1/2 cup walnuts or pecans at this time.

Sprinkle the oats mixture evenly over the apples and press the mixture down into the apples with your fingers, making sure every little space is covered and filled.

Drizzle 1/4 cup maple syrup over the oats topping.

Bake for approximately 45 minutes or until lightly browned. Let the apple crisp cool for 10 minutes prior to serving.

(i like to drizzle a little extra maple syrup over the crisp just before serving for an extra special touch.)
