I received this recipe from a friend - Hause and I tried it the other night for dinner - YUM!!
Ingredients:
2 pounds ground chuck or ground turkey
1 onion, chopped
2 envelopes taco seasoning mix
2 envelopes ranch salad dressing mix
2 (16 ounce) cans black beans
1 (16 ounce) can pinto beans (option to drain)
1 (10 ounce) can tomatoes with green chilies
1 (15 ounce) can tomato wedges
2 (11-ounce) cans white corn
2 cups water or broth
Optional:
sliced green onions (optional)
sour cream (optional)
shredded shard Cheddar cheese (optional)
To-do:
Brown the ground chuck with the onion in a sauce pan, stirring until the ground chuck is crumbly; drain well and then rinse with hot water.
Return the ground chuck mixture to the sauce pan.
Sprinkle the mixture with taco seasoning mix and salad dressing mix; stir to mix well.
Add the black beans and pinto beans, tomatoes with green chilies, tomato wedges, corn and water/broth and mix well.
Bring to boil; reduce the heat.
Simmer for 2 hours adding additional water if needed.
Top with green onions, sour cream and cheese.
Yields: 4 quarts
