If your frying pan catches fire, use a wet dishcloth to extinguish the blaze.
Using water itself is terrible idea. This is because the water, being heavier than the oil, will sink to the bottom of the fryer (or a pan on a stove-top) where it instantly becomes super-heated, the resultant steam exploding up, carrying the hot-oil with it. Where fireman demonstrate this phenomenon in an out-door fire-field, tthe result is a 30-foot high fireball. Here's what it would do in your kitchen:
