Pumpkin soup
Ingredients:
2 tsp oil
2 cups diced onion
4 cups freshly cooked or canned pumpkin
2 cloves of garlic - chopped
1 cup milk
1 cup cream
4 cups of your favourite stock
3-5 potatos - cubed
salt/pepper to taste
nutmeg to taste
- Add oil, onion, garlic and potatos to soup pot and sautee for five minutes.
- Add the stock, bring to a boil, then reduce to a simmer.
- Add cooked/canned pumpkin five minutes before the potatos are ready.
- Remove from heat and blend while adding milk and cream. Blend until smooth.
- Add salt, pepper and nutmeg to taste, then reheat carefully so as to not curdle the milk and cream.
- Enjoy!
