I've been working on perfecting a recipe for low-carb fudgesicles. Here is the best one I've come up with so far:
This is a recipe from Alton Brown which I have cut in half and altered to make low carb. The original recipe is here:

5 ounces half-and-half
1/2 cup unsweetened almond milk
3.5 ounces (by weight) sugar-free dark chocolate (one bar of Trader Joe's sugar-free Simply Lite dark chocolate)
1 teaspoon vanilla extract
1. Break chocolate up into squares and place in a glass measuring cup or small heat-resistant mixing bowl(needs to hold at least 2 cups).
2. Using a medium sized pan over medium heat, add almond milk and half-and-half. Sift cocoa powder into the milk mixture. Heat to simmer, whisking constantly.
3. Pour hot milk/cocoa mixture over the chocolate squares. Let sit for 2-3 minutes.
4. Whisk gently to combine, then add vanilla and continue whisking till thouroughly mixed.
5. Pour into popsicle molds and freeze for a minimum of 4 hours.
Makes four popsicles (my mold holds approximately 1/3 of a cup of liquid per popsicle).
