I made some vegan donuts yesterday--they were pretty good!

I made some a few years ago with my old buddies Pam and Tasha, but haven't deep fried anything since.

I haven't really been around a lot of donut-eaters in the last while, so it never came up, but now that I work in an office, there are the usual rounds of donuts being distributed as cheap fodder/horse-trading... It reminded me that I haven't eaten any donuts since that time I made them, so I promised to make some for my turn at the weekly "bring junk food to work for everyone" day.

I did a test run last night after modifying the only decent-looking vegan donut recipe I could find online. (Most of them call for baking the donuts--which seems ridiculous, if healthy, and is not really the same thing at all.)
To keep it within a small budget, I just used tapioca starch as egg replacer and just dusted them in regular white sugar.

However, they were still pretty tasty, despite my cost-cutting measures :)
Here is what I have figured out for Tuesday's Official Batch (tm):
-They aren't as good the next day..but there isn't much I can do about it, short of getting up at 3 am to start making them and serving them right when I get to work.
-The sugar dusting "melts" into the oil by the next day...so I think I will be dusting them at work, lol!
-I need to mop the oil off with something more absorbent than newspaper. Tasty, but still too greasy!
-They would be awesome with lemon squeezed on them--but I don't have any for this time around, it'll be something to think of for next time.
-I need to get a baking syringe (?) to squirt some jam filling :) I just spread jam on top of them this time, but aesthetically-speaking...
-Donuts are awesome and very easy to make :)

I won't be impressing my new workplace buddy though... she doesn't eat refined sugars--she even has a blog about it which I found through her facebook, in which she looks down pretty heavily on Corporate Drones bartering favour with refined sugar products... Oh well ;)
