Since some people asked me for the recipe for the Maple Apple Bread I made..


Well I decided to take the recipe from a cookbook I got from Mill Neck Manor and adapt it. The original recipe was for just plain Apple Bread, and I modified it for Maple syrup. I doubled up the recipe, so I'm going to include the doubled recipe:

Maple Apple Bread (Makes 2 loaves)

Ingredients:

4 c Flour
1/2 c Shortening
1/3 c White Sugar
3/4 c Real/Pure Maple Syrup
4 Beaten Large Grade A Eggs
2 tsp. Baking powder
2 tsp & a pinch Baking Soda
2 tsp Salt
4 c Finely chopped Green Apples (granny smith)
2 tsp Cinnamon
1/2 tsp. Nutmeg

Preheat the oven to 325 Degrees. Cream the shortening, Sugar, and Syrup in a mixer until lightened and fluffy. Beat in the eggs to the mixture. Sift together the dry ingredients until well mixed and aerated. Alternate adding the dry mixture and the chopped apples into the egg/shortening mixture. Split the mixture between the two greased and floured loaf pans (9"x5"x3"). Cook in the 325 Degree oven for one hour or until a skewer inserted into the center of loaf comes out clean. After removing from the oven, cool the loaves in the pan for 10 mins, then remove and cool for at least an hour on cooling racks.

On a side note, we went into NYC today and while on the NJ transit bus, we saw the Oscar Weinermobile entering the Lincoln Tunnel. Pictures will follow once I get them off my camera. :)
