Cherry flips

So, Cherry flips are a holiday baking tradition with my family and they are actually waiting for me to get home from uni to make them this year, which means they are being made 3 weeks later than normal.

My family must love me.

Cherry flips are heaven in your mouth and freeze REALLY well so they last a long time. I thought I would share my families recipe so others can enjoy them too.

Pretty much they are maraschino cherries wrapped in a shortbread cookie and they aren't that hard to make.


Ingredients

1/2 cup icing sugar

2 egg yolks

2 tsp almond flavouring

2 cups sifted flour

1/4 tsp. salt

1 jar red maraschino cherries

1 jar green maraschino cherries

small bowl pink-tinted icing

small bowl green-tinted icing

chopped walnuts (optional)

Insrtuctions

Cream butter and icing sugar well.

Stir in egg yolks and almond flavouring.

Add sifted flour and salt, and work in well.

Break off little pieces of shortbread and wrap around a red or green maraschino cherry.

Bake 325F about 25 minutes (not browned).

When cool, dip tops in pink or green icing, then chopped Walnuts.
