The reason bread rises is because the mixture generates carbon dioxide, which makes tiny bubbles inside the dough that expand over time. Live yeast makes the carbon dioxide as a by-product of metabolism, if you let the dough rise before baking. And if you don't, you end up with something inedible more often than not. Heat coagulates egg, baking soda reacts to acid... It's science.
