A little recipe to get you in the mood for St. Patrick’s Day: (amazingly easy) Irish soda bread!



Dry ingredients:
3 c. all-purpose flour
1/3 c. white sugar
1 T. baking powder
1 t. baking soda
1 t. salt

Wet ingredients:
1 egg, slightly beaten
2 c. buttermilk

Other ingredients:
1/4 c. butter (1/2 stick)
2 oz. dried fruit (I used cranberries, but you could use raisins or currants - mmm, currants)
1/2 c. hot water

Steps:
1. Preheat your oven to 325°F.
2. Soak your dried fruit in the hot water. This step will give you juicy plump fruit.
3. While the fruit’s soaking, melt your butter. I put my 1/2 stick in a microwave-safe mug and nuked it for 1 minute.
4. Mix your dry ingredients together.
5. Mix the egg and the buttermilk together, just to get them blended.
6. Add the egg/buttermilk mix to the dry ingredients. Toss in the fruit (just the fruit, NOT the water it’s been soaking in). Stir a bit, but don’t completely blend it all.
7. Add in the melted butter and finish mixing.
8. Spray a 9x5 pan with some non-stick baking spray.
9. Pour your mix into the pan and shove it in the oven.
10. Forget about the bread for about an hour. It should take somewhere around 60-70 minutes to bake. It’s done when you can stick a toothpick or knife into the bread and it comes out clean.
11. Cool on a wire rack, then wrap it in foil for a bit. I wrapped mine up overnight.
12. Eat. Duh.

Nutritional info for those that give a damn: 12 servings, about 200 calories per serving (5 g fat/32 g sugar/5 g protein). Hints on how to reduce calories: Cut into smaller pieces. (I got about 18 slices, by cutting thicker pieces, then cutting down the middle. It feels and looks like you’re getting a nice hefty piece, but it’s only half.) Take to work/school/prison and share with your friends.
