Cheesy Vegetable Bake
Thinly slice:
- 2 zucchinis
- 1 large or 2 small banana squashes
- 1/2 a vidalia onion
- 4-6 roma tomatoes
- 1 yellow or red bell pepper (optional)
- a little more than 1/2 stick of butter
Lightly grease a 7 x 11" baking pan (I used an oval one)
Put 1/3 of the vegetables in the bottom of the pan
Add salt and pepper to taste
Place about 1/3 of the butter slices on top of the vegetables
Sprinkle mozzarella over the vegetables
Repeat 2 more times, topping the last layer of mozzarella with parmesan, I am not giving you an amount, because I just put what I feel like looks to be a good amount.
Cover with foil and bake at 375 F for 20 minutes. remove the foil and continue baking for 7-10 minutes until the cheese is bubbling and the vegetables are as tender as you like them.
Even Katy liked it, and she is VERY hard to please with vegetables!
