Casserole & Dumplings

I'm trying a Vegetable (& soya mince) Casserole again. Last time I tried this, I couldn't get the vegetables to cook properly and it took hours. This time I pre-heated the oven first and I've left them in there a good 90 minutes so far with a lid on. We'll see!

I'm also trying Dumplings from a recipe for the first time, rather than using the much easier method from my mum. This one a) uses yeast and b) boils them first before adding to soup/stew. Wish me luck :-) I've thrown some mixed herbs & cayenne in there so even if they come out odd they should be at least interesting! My mum's, bless her, usually come out quite stodgy, so it will be interesting to see if the yeast really works.

Note to non-Brits: it's occured to me that "dumplings" means something different in the US and maybe elsewhere. Here is means flour & lard (White Flora :-) with some salt/pepper & water, rolled up into little balls and cooked with a oven stew/casserole-type dish. Good traditional carbohydrates :-)
