I'm a little unclear over whether the choice is between Hershey/VT/AZ, or you've ruled out AZ and are only looking at PA vs. VT.
Any way, it's a tough call. On the one hand you'll have plenty of time to do the amusement park thing when and if kids come along, so kicking back in a more mature environment now might be nice. On the other hand, amusement parks with kids are definitely a different kind of fun than when you're doing it on your own as a couple. If it were us, we'd probably pick Vermont, but then again we're going to a convention for our honeymoon so I wouldn't exactly judge by those standards.
I don't know, it's up to you two ultimately. I'd talk it over with Mike, weigh your options, and see which trip appeals to you both now, as opposed to thinking about which makes the most sense-- because in the end that's what you'll have the most fun with.
Yeah, I'm really leaning on VT now because Mike and I have both been to Hershey before. Though I know he was looking forward to visiting Dorney as well since he has never been there. I just have to wait until he gets home to verify that is what he wants to do.
What convention are you going to? If it makes you feel any less nerdy, I was looking up ren faires in VT myself. xD But they are all postponed until 2009. D:

We're spending the first half of the honeymoon in Key West, and then we're finishing up at Dragon*Con in Atlanta. Initially we wanted to go on a Caribbean cruise, but we also knew we wanted to do D*Con really badly. It didn't make sense to try and find time off for both things separately, not to mention the cost involved, so we figured FL and GA were close enough, and Key West is tropical-feeling enough, that it made sense to do the two back-to-back.

That said, I rarely accept people to be on my FL that isn't already someone I know. Sorry, but I like to keep my private life private. :)
