I don't normally eat eggplant. When I do, I prefer Japanese eggplant, which is smaller and tends to be less tough/bitter. But last week I bought a big eggplant and today I cooked it. First I pan-fried it on both sides in a bit of coconut oil, and then I put it in a baking dish with some splashes of lime juice and a handful of dried basil, topped with some pieces of mozzarella. Baked until the cheese melted, and then had myself a tasty dish :D
Somehow the lime juice brings out a sweetness in the eggplant. Next time I think I will use more. Lime and Basil combined to make the eggplant less heavy, and with just a bit of coconut oil, it wasn't as greasy. Yum!
