Backtagging: Backtagging forever. Saves my life, since I'm crazy-busy most of the time.
Threadjacking: Ask to be sure. I'll generally allow it unless the thread in question is really serious/essential to plot elements and threadjacking wouldn't make sense.
Fourthwalling: Go for it. Dr. Seward is from the novel Bram Stoker's Dracula and chances are if it's been published then your character has probably heard of it. I wouldn't really spin a plot off of it, though. Not really my thing. And I doubt Seward would know anything pertaining to alternative realities, but since 'Taker is from a world very similar to his own he'll obviously know more than others.
Graphic Violence: No limitations, really. Keep in mind Dr. Seward is not a violent character, and never will be. Nor does he approve of violence.
Graphic Sex: Again, I have no qualms with writing intimate scenes, but it has to be for a really good reason. I don't do pointless smut.
Other Offensive Subjects: Anti-religious sentiments/pointless trolling/taking things out on another player through the character. I doubt I'll be running into this problem but it irks me nonetheless.
Post Lengths: I love prose, I won't lie. I can write anything from semi-para to para depending on the situation. If it's going to be more in-depth then expect far more lengthly replies.

Innocent Affections: Those hands...He will fluster so easily. As a man from the late Victorian period he's very proper and dignified. It's also very unlikely he'll return them.
Heavy Affections: I highly doubt it unless they're looking to get married.
Fighting: Don't insult his Queen. He'll try to avoid it if at all possible but there are just some things that hit a nerve, as you've seen.
Injury and Death: I'd prefer that it doesn't happen unless it's integral to a plot device. I'll let you know if it ever comes up.
Mindreading and other Perceptions: Dr. Seward has an almost "magical sense" about madmen, though really that comes from his having lived and worked amongst them. As a psychiatrist he's been around some very scary human beings, so it's unlikely that he'll be afraid of someone like Undertaker. A little repulsed, yes. But not afraid. He wasn't even afraid of Dracula and that guy was ancient evil.
