I thought they said it in the book. It was cursed because he betrayed her - his family. The 'curse' would be considered the result of that betrayal I thought because it was supposed to be a symbol of the whole family thing. By him giving to her when they first met, the knife represented their bond/family. Hence, the above - when he betrayed them, it was tainted, so to speak.
I think grayx3eyedsoul got it right. Luke went back on his promise to keep Annabeth and Thalia safe as a family, and that essentially cursed the blade. I don't think it was ever cursed when Annabeth used it though, like Riptide was for Percy in Titan's Curse.
