Fish Paprikash
2 lbs of any firm white fish (Cod works well. so does Talapia)
med onion to taste
oil to saute onions in
1 regular sized can tomato sauce
1 cup white wine
2 tbsp paprika
2 tsp chili powder (more if you like it spicy & i do)
4-5 cups water
*cut fish into large pieces
*i hate cutting onions plus we didn't have any, so i used the dried kind that you get in the s
spice section
*add paprika, chili, salt & water. cook 10 minutes
*add fish, tomato sauce and wine
*simmer 34-40 minutes, until fish is cooked through
*stir occasionally
*serve over noodles. personally i thought it was a lot better with regular egg noodles than with the whole wheat noodles.

Mocha Cookies
* 1/2 cup butter, cubed
* 1-1/2 cups divided
* 2 teaspoons instant coffee granules
* 2 eggs
* 3/4 cup sugar
* 3/4 cup packed brown sugar
* 2 teaspoons vanilla extract
* 2 cups all-purpose flour
* 1/3 cup Cocoa
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
*In a small saucepan over low heat, melt butter and 1/2 cup chocolate chips. I used white chocolate chips
*Remove from the heat; stir until smooth. Stir in coffee granules; cool for 5 minutes.
*Stir in the eggs, sugars and vanilla.
*Combine the flour, cocoa, baking powder and salt; fold into the chocolate mixture with remaining chocolate chips.
*The dough should be kind of sticky and almost paste like
*Drop by round teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 9-11 minutes or until tops appear slightly dry and cracked. Cool for 1 minute before removing to wire racks to cool completely.

Magic Muffins
* 1 ¼ cups all-purpose flour
* ¾ cup Original Flavored Malt-O-Meal® hot wheat cereal, dry
* ½ cup sugar
* ¾ cup milk
* ¼ cup vegetable oil
* 1 egg
* 1 tablespoon baking powder
* ½ teaspoon salt
* 1 teaspoon vanilla (optional)
*Pre-heat oven to 400°F.
*Combine all ingredients in a bowl
*stir together until ingredients are just moistened.
*Spoon into a greased or paper-lined 12-cup muffin pan, filling cups ¾ full.
*Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean.
*Good with butter, honey, applesauce, jams....
