Coca Cola Cake

Because there are three things - chocolate, coca cola and marshmallows - to make all of mankind happy. I present to you a delicious combination of all three:



Coca Cola Cake

1 box plain white cake mix
4 tablespoons unsweetened cocoa powder
8 tablespoons butter, melted
1 cup cola
1/2 cup buttermilk
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cup miniature marshmallows

Preheat oven to 350 degrees. Coat a 9x13 baking dish with nonstick cooking spray.

Place cake mix, cocoa powder, melted butter, cola, buttermilk, eggs and vanilla in a large mixing bowl. With an electric mixer, beat on low one minute. Scrape down sides. Increase speed to medium and beat 2 more minutes, scrape down sides if needed.

Fold in marshmallows. Pour batter into prepared pan, smoothing out evenly. Bake until cake springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan. Approx 40 to 42 minutes. Remove pan, cool on wire rack 15 minutes.

Cola Icing

8 tablespoons butter
4 tablespoons unsweetened cocoa powder
1/3 cup cola
4 cups confectioner's sugar, sifted
1 cup chopped nuts, optional

In a medium saucepan over low heat, slowly melt butter. As it melts, stir in cocoa powder and cola. Let mixture come just to a boil, stirring constantly, then remove from heat. Stir in confectioners' sugar until the frosting is thickened and smooth. Fold in nuts.

Pour frosting over the top of the cake, spreading it out with a rubber spatula so that it reaches the edges of the cake.

Cool 20 minutes before serving.

Store at room temp covered with foil up to a week. Freeze up to 6 months wrapped tightly in foil.
