Mandarin Pilaf

1 box rice pilaf mix
2 tablespoons butter or margarine
2 cups water
1/8 teaspoon ground ginger
1 can (11 oz) mandarin oranges, drained
1 green onion (about 1/4 cup), optional

Remove seasoning pack from pilaf mix, set aside.

In large skillet, melt butter over medium heat and cook rice pilaf mix, stirring frequently, until light golden brown. Stir in water, seasoning packet and ginger. Bring to a boil over high heat. Reduce heat to low and simmer covered 15 to 18 minutes or until rice is tender. Stir in oranges and onion; heat through.
