First time poster here, but I've had a great many uses out of the wonderful recipes everyone puts up here. So here is my contribution (I really hope no one's already added this):
Golden Chicken Salad:
Ingredients:
1 mango cut into half-inch cubes
1-2 spring onions, finely chopped
1-2 red chillies, deseeded and finely choppsed (to taste)
200-250g of grilled chicken pieces
1 handful of lettuce, sliced or shredded
1 large handful of freshly chopped coriander
1 tspn oil
Juice of 1-2 limes/lemons to taste
How To:
1. Place mango cubes into a bowl with any juice they make, and with your hands, mix in chopped spring onion and chilli and squeeze over the lime/lemon juice (use as much as you want, the tart taste goes very well with the sweetness of the mango and the heat of the chilli)
2. Leave this to steep while grilling or panfrying the chicken until cooked, while also shredding and chopping in the lettuce.
3. When the chicken is cooked, add it to the lettuce, the mango mixture and most of the coriander. Use your hands to combine and toss, adding in varying amounts of oils, salt and pepper, tossing it again.
4. Place onto a serving plate, and sprinkle the rest of the coriander over the top of the salad.

p.s. just realised, I say tom-eh-toe, you say tom-ah-toe, I say coriander, you say cilantro.
