Ultimate Brownies
8 (1 oz.) squares of unsweetened chocolate
1 cup butter
5 eggs
3 cups sugar
1 Tablespoon vanilla
1-1/2 cups flour
2-1/2 cups chopped pecans, toasted
Preheat oven to 375 degrees F.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes. Blend in chocolate and flour until just mixed. Stir in the nuts. Pour into a greased 9 X 13 inch pan.
Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.
Boozy Brownies
Fudge brownie mix (or brownies made from your favorite recipe)
1/4 cup bourbon
1 cup butter
3 Tablespoons rum
2 cups powdered sugar
1 cup chocolate chips
1 Tablespoon solid vegetable shortening
Bake brownies according to package directions.
Drizzle brownies with bourbon as soon as they are removed from the oven; refrigerate.
Cream butter, rum and powdered sugar. Spread on cooled brownies. Refrigerate again. When cold, melt chocolate chips and shortening. Spread or drizzle quickly on top of brownies. Chill.
Butterscotch Brownies
1/4 cup shortening
1 cup light brown sugar, packed
1 teaspoon vanilla
1 egg
3/4 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup chopped nuts
1 cup chocolate or butterscotch chips, or 1/2 cup each flavor
Melt shortening in a saucepan over low heat; remove from heat. Mix in brown sugar, vanilla and egg; stir well. Stir in remaining ingredients. Spread in greased and floured 8x8x2 inch pan. Bake butterscotch brownies at 350° for 20 to 25 minutes. Cut butterscotch brownies while warm.
Blondie Brownies
1 stick butter or margarine (4 ounces), room temperature
1 cup brown sugar
1 egg
1 cup flour
1/4 tsp baking powder
1/8 tsp baking soda
pinch salt
1/2 to 1 cup chopped walnuts
1 cup (about 8 ounces) semi-sweet chocolate chips
Cream together the butter and brown sugar; beat in egg. Stir in flour, baking powder, and salt. Stir in nuts and chocolate chips. Spread batter in a greased and floured 7- X 11-inch pan. Bake at 350 degrees for 20 to 25 minutes. These brown very quickly, so be sure to start checking at the 20 minute mark.
