Spinach Balls

Thought I would throw in there my absolute favorite bring-to-the-potluck-or-family-gathering recipe.

Spinach Balls
2 (10 oz) pkg frozen spinach (those square blocks)
1 medium sized onion diced extra tiny
3/4 cups melted butter (I like salted, but unsalted is fine)
6 Large Eggs (whisked)
1 cup grated Parmesan Cheese
1 pkg Stove Top Stuffing (I use Chicken because I like it)

Preheat oven to 350 degrees. Heat spinach and drain. Drain really, really well or it will make a giant sized mess in your oven. Add the rest of the ingredients.

Roll mixture into balls about the size of those big marbles (I think they were called Aggies, but it was a really long time ago) maybe a little bigger, but not too big. You'll be tempted to make them too big because it will cut down on the making the ball time, which is really boring, but don't. If they're too big then they don't get as crunchy. Put them on cookie sheet. I don't know, about two inches apart or whatever, they don't really grow.
Bake for 25 minutes or until the outside starts to brown a bit.

This recipe can be doubled.
