3 cups prepared biscuit mix (Bisquick or Jiffy Mix)
3 tablespoons sugar
Pinch of salt
1 cup beer

Combine biscuit mix, sugar and salt. Stir beer into batter. If it seems too stiff, add a little more beer. Drink what remains in the can. Beat mixture. Drop into greased muffin tin and bake at 375 until golden brown.



1 tablespoon shortening
2 tablespons sugar
2 beaten eggs
1 cup cornmeal
1 cup flour
2 tablespoons baking powder
1 teaspoon salt
1 cup milk

Cream shortening and sugar and add beaten eggs. Stir in dry ingredients whic have been shifted together. Add milk and stir again. Bake in greased iron skillet at 425 until brown.



1/2 cup butter or margarine
1 cup sugar
3 ripe bananas (almost too ripe)
1 teaspoon baking soda
4 tablespoons buttermilk
2 eggs
2 cups all purpose flour
pinch of salt
3/4 cup chopped pecans

Cream butter and sugar well. Add bananas and mix well. Dissolve soda in buttermilk, combine with eggs, flour and salt. Mix well. Fold in pecans. Bake in one large or two small greased loaf pans at 350 degrees for 55 to 60 minutes. Cool before slicing.



1/2 cup molasses (for you non-southerner's it's usually found with syrup - if not I can send you some)
1 beaten egg
2 cups whole wheat flour
1 cup plain flour
2 teaspoons soda
1 1/2 teaspoons salt
1/3 cup sugar
2 cups buttermilk

Add molasses to beaten egg and mix well. Stir in whole wheat flour. Sift other flour, salt, soda and sugar together and add alternatively with buttermilk. Bake in greased and floured loaf pan at 375 for about 45 minutes or until done.
