Things I cooked today with the assistance of my sister:
Reuben Brats- These are brats that are grilled and then served on a split hoagie roll that has had swiss melted on it (warming rack on the grill, or the broiler). Thousand Island dressing is laid under the brat and is used as a topping sauce. A quickly cooked onion & saurkraut mixture is applied to the top. That mix is as follows: 1/3 cup thin sliced red onion, 1.5 cups saurkraut - squeezed of as much liquid as possible, you want it dry, 1 teaspoon caraway seed, 2 tblspn sugar and 2 tblspn of cidar vinegar.
Oil a hot skillet, add onions and caraway seeds. Saute until onion is tender (2-3 minutes)and then add saurkraut, sugar, and vinegar. Add pepper to taste, and once warm it is placed on top of split brats on the buns. 4 brats, 1 per person. Brats are the pre-cooked variety (though fresh also works), split and grill till heated through, place on roll.
This took about 20-25 minutes. And was wonderful, so wonderful.
Other things: Canned cherries, basically the last of the bings. Also trying to candy some cherries, which is a 2 week long process.
Tomorrow: Mushu Brats and maybe some fried pies. Hopefully a trip to the fruit market.
