It's Waffle-time again. Best Swedish Spring-tradition and something that hints at both pagan and Catholic traditions from before Luther made us all protestants. This year I have made two batters, one of my mum's usual Oat Waffles from Gotland, and one where I replaces the oats with spelt flour, and they turned out really good. One can add some quark cheese or yoghurt to make the waffle more Eastern Euopean in taste
Good recipe:
3 eggs are whisked with 4 tbsp sugar
Alternately add 3 dl flour mixed with 2 tsp baking powder and 3 dl milk
Add 1 dl spelt or oats
Finally mix in 125 g melted butter and 1 dl COLD water
And optionally: add a few tbsp of quark
Heat the waffle iron and starts making waffles.
We'll be eating them all weekend with clotted cream and raspberry or lingonberry jam.
