So it is the 25th of Mars, and one year has passed since my beloved maternal grandfather passed away. Feels like it was just a few months ago, but last year went by very quickly. I miss him, but I am also happy to know that he didn't have to go on living like a vegetable. He had had enough. When he couldn't take his daily walk and drive down to the sea and have a swim with his buddies, life wasn't any fun. I am also very proud of my grandmother, who has got on with her life in an amazing way. They were together for over 60 years and I know that she miss him daily, but she is one strong girl. I respect her enormously, even if we have had our differences in the past. She is of another generation and time, and I cannot change that.
Today is not only granddad's death day and Good Friday but perhaps most importantly (in a very disrespectful and blasphemous way), today it is Våffeldagen!! The Swedish Waffles Day, when we all gorge on waffles, whipped cream and jam. All just because we silly Swedes thought that "Vår Fru Dagen" (Our Lady's Day) sounded like "Våffel Dagen" (Waffle). The tradition to eat waffles go way back to the 17th century at least, and every proud Swedish Mother has her special recipe. My sis is coming over later today and we are fighting about which kind of waffle we shall make. She likes the "fras våffla" or more crisp waffle, and I prefer the softer and slightly more satisfying waffle recipe from Gotland, made with oats in the batter. You will need a special
electric waffle pan to cook them in.

2 eggs and 4 tbsp caster sugar are beaten together.
In another bowl, mix 3 dl milk and 1 dl water with 1 dl of oat flings.
Mix 3 dl wheat flour and 2 tsp of baking powder.
Add the oat/milk mix and the flour alternately to the egg-mix.
Stir well.
Add 125g melted butter.
Leave to set for some 30 min to 1 hr.
Heat the pan, grease it and add some batter. Cook until golden and serve with whipped cream and jam.
Good idea to double the recipe, since you can save the leftovers in the fridge, and trust me, you'll love them.
