What a day! Training's really tough. Gen San had me scale and clean so many fishes that I feel like I have scaled and cleaned enough fish all my life. But it paid off because Dad taught me how to cut the parts for perfect sashimi. Since there was quite a crowd in the restaurant today, Dad had me try my first plate of tuna sashimi.
