I should of posted a new picture by now but haven't gotten around to it. I'm working on it.
What I did do this past weekend was make Ginger Syrup for Ginger Soda.
This recipe is from one of my favorite books,
Better Than Store-Bought 6 oz. fresh ginger root, approx.
2 C. water
1 1/4 C. sugar
1. Peel and finely chop the ginger; you should have about 1 cup.
2. Bring the ginger to a boil with the water in an enameled or stainless-steel saucepan. Simmer for 5 minutes, then let stand for 12 - 24 hours, covered with a cloth.
3. Strain through a sieve lined with 2 layers of cheesecloth; squeeze the pulp in the cloth to extract all possible juice.
4. Return the juice to the saucepan, add sugar, and bring to a boil over moderate heat, stirring. Boil gently for 5 minutes, skimming off any froth.
5. Cool, strain into a bottle, and refrigerate.
To use: Use about 1 Tbsp. of syrup mixed with 6 oz. of chilled soda water to make a gingery drink.
Note: The text states the syrup keeps indefinitely, and a spoonful is really good over vanilla ice cream.
I probably use a bit more than a Tbsp. per drink, and it's really good - and no corn syrup!
In other news, I feel bigger every night. Days are still pretty good. Last couple of nights I wake up a zillion times for the bathroom and one of those times I have a horrible time trying to get back to sleep - and the baby is moving around a ton at night now! I supposedly could do cat cows to try to get him to fall asleep, but I'm enjoying the movement too much. Sometimes it puts me right back to sleep when Marc puts his hand on my stomach. He tells me when I'm already asleep and he does that I start snoring :) I know this doesn't sound too special, but it really is.
