Looks good!

I believe in the UK shepherd's pie is made with lamb, whereas cottage pie is made with beef.

That could be. The book said it was traditionally made with lamb and Wiki says that cottage pie and shepherd's pie is the same thing, so it could be that originally, in the UK, it was made with lamb, and then it came over here, we changed its name like we always do, and used beef because it's more readily available.

I haven't, yet, but there's a lemon souffle I was interested in. There's a pretty wide range of recipes and I generally like the America's Test Kitchen recipes, on the whole.
