Lily sent me this in 2004. It was my first Thanksgiving out of the country. I've made it every year since. It's now the most popular dish at Thanksgiving. When David and I decided to get married on this most special occation all my friends demanded we serve this. I'm give this recipe to the chef, and I hope to God he has a sense of humor. Because if he doesn't make it, I will!
Lily, you don't know how much this has made me feel 'at home'. Funny, since my family don't do sweet taters. They do yams. Still, I'll be thinking of you in 115 days.
I hope you all try this out. It's amazing.
this is what we have at thanksgiving. we are anti-marshmallow. the topping is like cookie. it's good.
preheat oven to 350°
spray glass casserole with pam or whatever
3 cups mashed sweet taters (clean em, peel em, smash em, measure em, or buy them in a can...)
2 teaspoons vanilla extract
3 eggs, well beaten
1/2 c melted margarine or butter
1 c white sugar
1/2 c evaporated milk (not sweetened condensed, just evaporated)
mix together and dump into casserole dish
topping:
1/2 c margarine or butter
1/2 c self-rising flour
1/2 c brown sugar
1/2 c chopped pecans (or walnuts if you prefer)
combine in a bowl with fingertips until crumbly and sprinkle on top of sweet potato mixture in casserole.
bake about 30 minutes or until topping is slightly browned and the potato stuff is hot through.
