Parmesan Zucchini Quiche = nummy. (Otherwise known as Oh Crap, My Eggs Are About to Expire, I'd Better Use Them Up Quick.)

I pre-cooked the zucchini for a change (sauteed in olive oil with some onions, to get some of the water out), so the egg set better than it usually does when I toss zucchini in. I've never tried it with parmesan before, but after standing in the cheese section for awhile being wishy-washy, I noticed bags of shredded parmesan for a reasonable price, so I went for it.

Yum.
