My Kindle, with as many books as I could fit on it.

Plenty of underwear.

A lifetime's supply of shampoo, because it I don't wash my hair every day, I get horribly grouchy.

Probably as much anti-anxiety medication as I could get my hands on, because being stuck out in space for a long time would make my claustrophobia horrendous!

Hmmmm. That's a great and very hard question! I'll go with the scene in "Hand of God" (s1 ep10) where Apollo has to execute Starbuck's out-of-the-box plan. Upon his return, there's this dialogue:

Kara: Apollo, you magnificent bastard, that was one hell of a piece of flying and I couldn’t have done it better myself.
Lee: I’m sorry, I didn’t hear you.
Kara: I said that I couldn’t have done it better myself.
Lee: Well, thank you.
Kara: Hmm. I had my doubts.
Lee: So did I.
Kara: Mmm.
Lee: I wasn’t sure that crazy-ass plan of yours could even possibly work.
Kara: [Hands Lee a cigar] You deserve this.

Hee! I love Lee's face in that scene with the bottle. He looks so genuinely happy, and that's not something we see of him that much.
