I have a similar distrust of GPs, mainly through the professional dealings that I have with them. Had been refraining from saying anything though, as in situations like this all you can do is trust that you're in the best place.
I'm guessing he can't be at home to regulate water intake because he'd have to do that orally, which might still affect the pancreas (pure guesswork though).
i can understand his and your frustration at the circumstances in the hospital, but dont let david go home until he is well, pancreatitis can get very serious and if he discharges himself without the consent of doctors he will enevitably end straight back in and have to go through a&e all over again
discuss your complaints with the staff and doctors, and if it doesnt improve ask for a complaints form and they will start taking you a bit more seriously.

Seeing him take a turn for the worse and looking so ill made me rather upset.
Today has been a better day (hopefully will have time to do an update later on tonight).
