Good Veg

thefourthvine  mentioned  on twitter that she's mad at recipe bloggers that treat vegetable recipes as penance for their sins, rather than food they actually enjoy, so here is my best vegetable recipe:

Saute:
- Onions
- garlic

when soft and good smelling add:
- red pepper flakes, a pinch, or more to taste
then:
- chopped tomatoes, a whackload

Simmer until slightly reduced.  While waiting, clean and chop:

- amount of chard roughly equal to tomatoes.

Separate leaves and stems, chopping stems into pieces not bigger than you want to find on your fork, chop leaves however you want.

Throw in chard stems whenever they're chopped.  Simmer some more, until tender, and the tomatoes juices have thickened, a little.  (This takes a bit longer than you might hope, so you can wash the dishes, or whatever.)

Once tender, throw in chard leaves, and cover to steam until they're wilty and bright green.
ETA: I made a batch last night, and I just stirred them in, and that worked fine.

Stir, add:
- salt to taste.

I like to make an enormous batch (about eight cups of tomatoes?) in fall, and freeze it in meal portions, because I have almost all the ingredients in my garden so it is dirt cheap, and I can easily eat it once a week all winter. This post also on dreamwidth (
