Vegetarian Chili

Sio passed along this recipe to me yesterday and we made it for a couple of boys who live in the neighborhood. It's a wacky take on vegetarian chili with a very pleasing flavor profile -- cilantro, orange peel, and sweet potatoes come together in a great way :)

Here's the recipe, we used Mexcian cheese and no sour cream:

chop 5 or 6 cloves of garlic
one med yellow onion choped sauteed in a fair amount of olive oil
Add in chopped red pepper and chopped green pepper and
2 sweet pots that you have peeled and chopped into little cubes
28 oz large can of chopped tomatoes
carton of chicken stock-
sauteed mushrooms
chopped kale?
chop cilantro and grate orange
can of black california olives- drain and cut in half and put in
can of garbanzo beans and can of kidney beans (drain beans)

serve with dollop of sour cream and chopped avo/ grated chedder cheese
corn bread mix in stiff plastic bag that seals on top
