Sure! I have a graphic tablet and it makes all easier without doubt! I use the default brush, the one round and hard. If you have the tablet, the only thing to do is this:


Check shape dynamics, set the control on pen pressure et voilà! Depending on the pressure that you'll make, the line will be thinner or thicker. You can also change the minimum diameter to set the min. thickness.
If you also want to change the opacity of your strokes, depending on the pressure you make, then check transfer, too. You can set a minimum opacity if you open the tab.

It's pretty hard to do with a mouse, but not impossible; you can simulate the pressure of the graphic tablet using the pen tool. In this case, the brush setting will be this:


Check shape dynamics and set the control on fade. The value will depend on how long the line will be and at what point the similation will begin. For an icon I think max 100? Same story for the "transfer" option.
After you did that, take the pen tool, make the line and click the right mouse. Click on stroke path, select the brush option and ok!
