Hey ya'll! It's been a bit quiet around here letely, so I thought I'd add a recipe I found for easy black bean soup. I love this recipe! It is good as a hot soup, or over rice (I bet you could thicken it for a taco filling or on nachos).
It's taken from the book You: On A Diet.
1 T olive oil
1 onion, chopped
3 garlic cloves, sliced
2 stalks celery, chopped
1 carrot, chopped
2 quarts (8 cups) low-salt veggie or chicken stalk or broth (you can make your own!)
2 cans (15 or 16 ounces) black beans, rinsed and draiened (you can always use dried, just soak before hand)
1 tsp ground coriander
1/4 tsp cayanne (I use a little etra because i like spicy foods, just experiment)
1 T balamic vinegar
1 bunch cilantro leaves, chopped (for ganish, it's optional)
Heat oil in large pan over medium heat and add the onion; cook for 5 minutes. Add garlic, carrot and celery and cook until soft (about 5 min) stirring occasionally. Ass stock, beans, and spices then simmer uncovered for 10 min. Stir in vinegar. Transfer to blender or food processor and process to desired consistancy (if you want it smooth, add rice if you want a thick, bean-y filling). Warm if nessisary and ladle into bowls.
Enjoy with a bit of cilantro!
