1_eats_cheap So, you know that "No Pudge Fudge" brownie mix? Leaving aside the wretched name and packaging, the great thing about this product is the recipe on the side of the box (contributed by a consumer) for making the brownies one at a time. You combine 2 T of the mix with a tablespoon of vanilla yogurt and pop it in the microwave for one minute and you've got a hot, chewy brownie. Yum.
I love these things because they're a) not bad for you and b) don't leave you with a whole pan of brownies to either be consumed or thrown out over the next few days. So, had a brainstorm and decided to try it out with cake mix. Presto! Cupcake for one!
I haven't thought through the frosting issue, since this one barely had a chance to cool. The cake is a bit denser and chewier than what you expect from cake mix cake, and I think something in a light glaze might do nicely.
Next experiment: flavored yogurts?
