So, it's stopped fermenting, has a dry apple smell. It's a good, apple-juice golden-yellow colour! Noticeable smell of yeast, but not too strong.

SG reads 0.993 - super-dry! It tastes dry, should be about 9% alcohol (the max potential for the sugar content). Higher than I wanted, but that's what I get for not paying attention and forgetting to stop the fermentation when I wanted to! The taste is decent, actually, dry apple cider, like strongbow but a little yeasty, and slightly too acidic (which should mellow with a malolactic fermentation). I might still attempt to sweeten it slightly, we'll see how it's drinking in a couple weeks. If it's palatable next week (it could happen!) I might bring a bit to Feral!

There's a lot of lees, not well settled yet - I'm gonna let it sit a bit and then rack off as well as I can, most likely it'll all just go into the secondary and I'll siphon it off of the lees from there.
