I'm on vacation, by the way, for ELEVEN DAYS (including weekends). WOO HOOOOOOO! Half staycation, half roadtrip to a New England reunion with my boarding school friends. I'm so excited, it's contagious. Samuel keeps asking what day it is, and if we're going to see mommy's friends tomorrow.
The yummy! pertains to my latest delicious adventure into the mundane. Tacos are pretty mundane, right? For years, I grew up eating tacos seasoned by McCormick's and, although I sometimes mixed my own, I usually used the packaged stuff when cooking for myself or with Jeff. Until it triggered anaphylaxis, of course.
Refried beans also began to trigger anaphylaxis, whether they were made with pintos, black beans or "white beans". Homemade or canned, it was all bad news.
I was devastated. After a few taco-deprived months, I decided to try speckled butter beans. Broad beans, you see, do not (yet) trigger anaphylaxis. I cooked the speckled butter beans in water with butter (our bacon grease has been contaminated with maple bacon grease... not good for beans!) until they were mash-ready, drained them of about half their liquid, then used my immersion blender to mash them up with some garlic and salt.
The taco meat was made with just the right amount of garlic, cumin, cayenne, salt and pepper.
And then. AND THEN! We constructed this homemade nonallergenic goodness into tacos wrapped in home-cooked tortillas. OHMYGOD as Jeff said, "These are some damn good tortillas!" Anyone who knows Jeff knows that this was quite the outburst. Costco carries uncooked tortillas that are from another universe, they are so good. I will never again buy the prepared tortillas from the store. Seriously. Try these things, and you will never go back.
So that's my latest excitement.
