"Jiko-The Cooking Place" is the best restaurant at WDW. Period. Of course, they may already be booked.
"Flying Fish" at The Boardwalk is another one of the best places we have ever dined at WDW, but it is not cheap. Avoid "Big River Grille & Brewing Works" on the Boardwalk.
The clambake at "Cape May Café" at The Beach Club is still good, but the quality has gone down a bit over the past 13 years while the price has gone up.
"Palio" at the Swan was very good but a little overpriced.
"Flame Tree Barbecue" is the best place to eat at DAK.
"The Coral Reef" at Epcot was still good when we were there last year but "Nine Dragons" at China was not.
"The Spirit of Aloha" Luau show at the Polynesian is worth seeing and the food is good.
"Kona Cafe" at the Polynesian, "Grand Floridian Cafe", "Concourse Steakhouse" at the Contemporary and both "Artist Point" and "Whispering Canyon Cafe" all served great breakfasts.

Friends of ours stayed there last year and loved it. We had breakfast there on a trip several years ago and thought it was great.
Must sees? I would say "Soarin'" but you already have one of those. "Tower Of Terror." Oh wait, you have that too. ;) Let's try again:

"Rock 'n' Roller Coaster"
"Fantasmic" (much better at WDW IMNSHO)
"Lights, Motors, Action!™ Extreme Stunt Show"
"Muppetvision 3-D"
"Voyage of The Little Mermaid" (shh.) ;)
Epcot:
"Test Track"
"Mission Space" (although I did experience some vertigo afterwards)
TMK:
"Haunted Mansion" (so you can see the differences compared to DL)
"Splash Mountain" (better than DL)
DAK:
"Dinosaur"
"Festival Of The Lion King"
"It's Tough To Be A Bug"
"Expedition Everest" was not open when we were there but I'm sure it kicks ass
