If there is one thing that I am good at, it is making good with what I have.... in the kitchen. I am in desperate need to grocery shopping, but deathly hungry when I made it home after working and working out today. I ended up making a totally experimental meal that turned out awesome. Let's share:

Capellini di Estate (Angel Hair of Summer)

(I hate measuring, so use your good judgment and trust your tastes)

garlic (minced)
onion (diced)
peach or nectarine (diced)
spinach leaves
olive oil
red pepper flakes
black pepper
capellini (or any kind of pasta)

1. Start boiling water and throw in some salt to increase boiling temperature and season the pasta

2. Dice onion, garlic and half a peach/nectarine

3. Sauté onion and garlic in olive oil on high heat

4. Water should be boiling by now, throw the pasta in

5. Onion and garlic should be cooked and smell really good at this point, so turn the heat to medium and throw in some red pepper flakes and a dash of black pepper

6. Throw in the fruit and spinach in, keep sautéing for another 3 minutes (until spinach is lightly cooked)

7. Pasta should be done by now (Capellini takes 3 minutes, but if you're using another cut of pasta it might take longer)

8. Drain pasta, combine with all the goodness in the skillet

9. Toss it around, top off with shaved parmesan

What to do with the other half of that peach or nectarine? Core the fruit completely and fill it with yogurt or ice cream, like icing on a cup cake. Throw it in the freezer somewhere around steps 4 and 5 and by the time you're finished with your meal, you'll have a yummy handheld dessert waiting for you. In my case I used chocolate yogurt - yummy yum.

Another random note: I've been obsessed with listening the Ne-Yo song Because of You this week. I've also started taking the hip hop class at my gym (which I'm not very good at, but at least I didn't fall on my ass yesterday - I did last week). I was on such a high last night b/c we did our routine to Ne-Yo. I didn't want it to end!
