Mondo's marinara

Apparently my favorite restaurant from my childhood has reopened. My friends wanted to go out for my birthday, so we went to their new locations. Mondo's is just as delicious as I remembered. My mom pointed out to me that their sauce, which was like eating memories, has a touch of anise in it. So, tonight, I decided to try and make a similar sauce. It's delicious!



Ingredients:

-2 medium white onions
-2 carrots
-3 Tbsp butter and/or olive oil
-3-4 cloves of garlic, smashed
-1/3 cup dried basil
-1/2 tsp anise seed
-1 can tomato paste
-1 can tomato sauce
-2 cans diced tomatoes
-1 bay leaf
-salt, pepper and sugar to taste

Peel and quarter the onions. Clean the carrots and break into 1-2 inch pieces. Purée onions and carrots in food processor. Sautée the puréed mixture in the butter, with a little salt, in a large skillet for about 10 minutes. Add the garlic, basil and anise seed. Cook for about 5 minutes over medium. Add the paste, sauce and diced tomatoes. Add bay leaf and cook for about 15-20 minutes. Salt, pepper and sugar to taste. Serve over pasta.
