Have I posted this before? Pardon me if I have; I don't know how to search bonappetityall. Anyway, this Indian dish uses no authentic Indian techniques, and for that reason it is very simple to make. It's also delicious. I totally made it up.
half head cauliflower, chopped
1 can chickpeas
1 can crushed tomatoes
1 cooked new potato
currants or raisins
cashews
fresh cilantro, chopped
chopped raw white onion
good curry powder (mine's madras)
salt
vegetable oil
chutney
cooked rice (mine's brown, for health considerations, but yours can be basmatic)
Cook rice and potato, separately. Meanwhile, chop cauliflower into bite-sized pieces and simmer in crushed tomatoes mixed with salt and enough curry to darken the tomatoes, maybe 2 Tsp. When cauliflower is tender, stir in chickpeas, potato, currants/raisins and vegetable oil.* When that is up to eating temperature, serve on top of rice with cashews, cilantro, onion and chutney. Divine!
*At this point, if you like, you may add fresh spinach and/or frozen peas.
