It's Latke Night!

This is the night of the year that my kids crave, tonight... mom makes the latkes.   This year I'm being lazy and bought pre-shredded potatoes.  I don't have a food processor and shredding a five lb bag is murder on my hands, especially when it's so cold out.

Follow this link for pretty good Latke Instructions from the Utah Hillel.  This is pretty close to how I make my latkes, I like mine extra crispy so I always include about a cup of matzah crumbs (regular bread crumbs are fine too) into my mix.  I also always fry mine in a deep pan of EVOO.  Latkes are all about the oil, so make sure you use the good stuff.

Q: Why are Latkes all about the oil?
A:  Because that's what the miracle of Hanukkah is all about.  No, it's not just a cooking thing... the miracle of Hanukkah is Olive oil.  In 165 B.C. when Judah Maccabee and his brothers found a drop of oil to light the candelabra in the Temple in Jerusalem, was not soy or vegetable oil,  it was olive oil.  As old as history, olive oil has always been an integral part of life in the Mediterranean.   Read his great article about olive oil from the New York Times.
