We have cooked 3 meals with the beef we ordered and been pleased so far. We ordered the higher fat, 25% meat, because it was on sale, so I do have to drain a little off to keep things from getting swimmy. This morning I cooked my eggs in some of the fat from last nights spaghetti sauce. The meat is tasty, only a little grassy tasting. and, it was 3.50 per pound, on sale, with and extra 50 dollar discount for buying 98 pounds. Total bill 425.00 for 4 pounds of pemmican, 1.5 pounds of jerky and 98 pounds of grass fed beef. My freezer is happily humming along. I feel like Ma Ingalls, right here in the middle of suburbanopolis.
Interestingly, when the kids eat this meat, they eat less. I don't think it is just the higher fat content, I think it is that the nutritional value is higher, and their bodies respond to it. I also feel really good after eating it. Good thing, since we have so much.I am thinking we will have burgers again for supper tonight. Fortunately for us, Viscero and I are food compatable.
Here is a bread recipe I am going to try this afternoon.
6 eggs
5 cups almond flour(I will be using pecan, since that was cheaper)
1/2 cup mayonnaise
1 cup seltzer water
1/2 tsp baking soda
pinch of salt
I'll post how it turns out. I am excited about trying this one because, a, it has no honey, and b, it has no farmers cheese, which is costly and hard to get.
I also got my pecan flour in the mail today. 3.50 per pound, no shipping. bring on the earthquake, were ready!
