You know, you'll think I'm silly, but I think the very best bet for relearning to read for pleasure is Harry Potter. One of my work friends was recently complaining about how he never reads anymore, then happened to pick up a Harry Potter, and hasn't been without book in hand since. The trick to getting 10 year old boys to read is the same as the trick to getting 25 year old boys to read, apparently.
On the subject of David Eddings, my recommendation depends entirely on your mood. He has fantastic plots, strong female characters, a whimsical sense of the world, but his books lack subtlety and sometimes tend towards caricatures instead of character development. I love him, just as I have loved him since I was in 7th grade and first started reading The Elenium. And I am quite sure that I'm not the only one on our friends lists who has adored him for more than a decade. So if you're in the mood for something fun, fantastical, and easy to read, I 100% recommend him. Also, if you're drinking wine. But if you're looking for something with a bit more meat and mental challenge, he might not be quite right.
