i adjusted this from a nice veg cookbook i bought on the cheap.
2 slices toasted whole grain bread - something hearty
laughing cow low fat spreadable swiss (or any neufchatel or cream cheese)
broccoli sprouts
basil
cilantro (or arugala)
cukes
apricots (i used a white peach)
the recipe recommends snipping the basil (and cilantro if you use that instead of arugala) into the cheese and blending, but i just layered in on. spread on both slices, stick the sprouts to one side, layer the cukes and peaches (or whatever), and chow. i recommend being sparing with the cilantro, to not over power. also, alt and pepper the cukes. so yummy!
super busy, tons going on, maybe an interesting hot boy in my future (can you say helicopter paramedic?!), grandpa is steadily strengthening, life is a whirlwind, love you all kthanxbye.
